The wine from organic vineyards has a bright straw yellow colour, which produces a thicker glycerol ring and a more oily movement. Its rich and evolving aroma is still dominated by sweet barrel spice and roasted aromas, but behind it are ripe tropical fruits, quince and juicy summer pear. It has a full-bodied and dense taste, enhanced by noble oak flavours, a creamy texture and an almost meaty structure. It is a full-bodied and complex green velvety wine, suggesting fruitiness from more mature grapes, greater concentration and a more pronounced presence of oak flavours. On the finish, more intense ageing notes, subtly salty minerality, exciting astringency, a solid structure and a lively fruitiness begin to merge.
